Finally got hold of INUTAK recipe from Martel's aunt.  My good friend from Canada is craving for this, and I have decided to post the recipe here. This is a delicacy from Taguig, fits well as Ice Cream toppings J . Yummy!!!

Ingredients:

  • Sugar (about 1 kilo)
  • Coconut milk (extract from 5 coconuts/niyog) – you can buy canned coconut milk from Oriental or Filipino stores
  • Galapong (mixed of 3 cups of rice and 2 cups of malagkit rice) – you can replace with Glutinous rice flour available in Oriental or Filipino stores
  • Vanilla (about ½ tsp)
  • Coloring is optional
  • Water

Procedure:

  • Mix together sugar, ½ of coconut milk with water, galapong and vanilla. Add food color (optional).  Set aside the other ½ pure coconut milk for the topping
  • Put in a thick pan, medium fire. Continue stirring until cooked
  • Prepare lanera, brush with a bit of cooking oil
  • Put cooked galapong in the lanera.  Press flat down.
  • Top with the other ½ of PURE COCONUT milk (don’t add water)
  • Bake until toppings are golden brown

Enjoy! See mine, it's almost half-way finished in one seating :)

hi!..ive been looking for this recipe..i also live in canada and want to try this out however the measurements in your recipe are quite vague...how much canned coconut milk and how many cups of rice flour do i use??...at what temp do i set the oven??...it would be great if you can help!..thanks again!

all together, about 6 cups coconut milk (3 cups for topping, 3 cups for the mixture). As for the rice flour, about 5 cups. Oven temp from lowest to mid... baking is just for the topping to make it golden brown.

Hi! Thanks for the recipe. I've also been craving for this. It has been 8 long years since i had some. I will try this next weekend. Btw, I recognize you. You are from Ligid tipas right? How funny that on doing a google search for this recipe, a kababayan from tipas is the author of the first result. I grew up in palingon. But for the last 8 years andito sa America, hence the craving for inutak. Thanks again!

oooh yummy... and goes so well with any ice cream flavor. Last tasted it at the Rosales-Ymzon reunion 3 years ago in Pateros.

Hi! I am from palingon too. Pero nasa states na ako ngayon. May tanong lang ako kasi i tried this recipe pero glutinous rice flour ginamit ko at coconut milk in can. Nung nilagay ko na sa oven para maluto ang toppings kumulo siya and humalo ang toppings so nawalan ng toppings. Nilagyan ko ulet ng gata pero ganun ulet. What will i do? Chaka ilan dapat ang temp ng oven? Fave ko din ito kaya i want to know how to do it perfectly but i can't.

Follow up question. Gumamit din ako noon ng galapong pero hindi ko naman alam kung paano magiging smooth kasi bibingka naman kinalabasan. I hope you can help me. Thanks.

if the recipe calls for water how much water is needed for the recipe. recipe also calls for five fresh shredded coconut extract. what is the meaurement for that 5 or 6 cups plus how many cups of water.
